Noodles: You may use any type of noodle for this dish, such as whole grain, hakka noodles, egg noodles, soba noodles, and so on. We used wheat noodles in this recipe.
Pan: Most Chinese restaurants utilise a carbon steel pan, which helps to cook the food and imparts a smokey scent. For home cooking, a thick bottom pan or bare cast iron skillet works nicely.
Soy Sauce: To obtain an umami flavour, any Chinese noodles must have soy sauce. For health reasons, use organic or organically brewed soy sauce.
Other sauce: I did not use any sauce in this recipe, but you may easily substitute your favourite sauce, such as chilli sauce, schezwan sauce, or sriracha.

- 5 cup Water
- ½ tsp Oil
- ½ tsp Salt

- ½ cup Shredded Carrots
- ⅓ cup Chopped Spring Onions
- ⅓ cup Sliced Bell Pepper (Capsicum)
- 10 French Beans
- 3 tbsp Toasted Sesame Oil
- 1 tsp Chopped Garlic
- 1 tsp Chopped Ginger
- 1 tsp Rice Vinegar
- 2 tsp Soy Sauce
- 2 tsp Chopped Celery
- Salt (as per taste)
- Black Pepper Powder (as per taste)
Instructions
Direction for Boiling Noodles

Heat water in a saucepan with salt and oil and bring it to a boil.

Cook the noodles in boiling water until they are barely cooked or al dente.

Rinse and cut the veggies while the noodles are boiling.

Drain the noodles in the colander or sieve after they are al dente.

Then, rinse the noodles in fresh water by running the colander or sieve under cold water.

Drain all the water from noodles and set it aside.
Cooking Veg Noodles

Heat the oil in a pan.

First, add garlic and ginger in the pan and stir fry or sauté for a few seconds on low to medium heat.

Turn the heat up to high and add the spring onions. Stir-fry the onions until they turn transparent.

Toss in the carrots, capsicum, and french beans, and continue to stir fry over high heat until the vegetables are almost done.

The veggies should have some crunch, so don't cook them until they're entirely soft.

Mix in the soy sauce, celery, salt, and pepper. Combine them well.
